Birthday Cake Ice Cream and Rice Crispy Sandwiches!
A double scoop to start off our first episode!
Hi Very Special Readers! In the very first Malibu Sands episode, we learn that the Bayside kids are working at the beach club over the summer — except for Lisa who will be hanging out by the pool like the rich Malibu summer teen that she is.
Of course, the big guest star of this episode arc is Leah Remini as Stacey Carosi (but we haven’t seen her just yet). We have, however, seen Mr. Carosi — the manager of the club played by Ernie Sabella —better know as Pumbaa from The Lion King. I like to type while I play the episode in the background and when my eyes are on the computer screen, I imagine that Pumbaa is the boss of the beach club.
We soon meet Stacey Carosi and Zack quickly offends her. Turns out that Bayside High Loveable Sociopath schtick doesn’t fly here in Malibu!
The first day of work is also Zack’s birthday. His friends decide to have a surprise party at the club by breaking in after hours. (A plot that could only work with these upper middle class kids from the Pacific Palisades who don’t really need these jobs.) This brings us to our recipe for this episode…or should I say recipes. I couldn’t decide what to make, so I made two things. They’re combined into one recipe, so you can pick and choose what you want.
I started off mostly following The Minimalist Baker’s recipe for vanilla bean coconut ice cream though I have made a couple of notable exceptions — firstly, she uses much healthier ingredients than I do and secondly, I’ve never made vanilla bean ice cream. I use this as the base of my ice cream. So no matter what flavor I am making, I use 1 can of coconut milk, 1/4 cup of sugar, 1 pinch of salt, and then whatever else I’m feeling like doing. In this case, I was feeling like vanilla would work well.
So let’s start with the vanilla ice cream ingredients:
1 can full fat unsweetened coconut milk
1/4 c sugar
1 pinch salt
1 tsp vanilla (but honestly I just put in however much I feel is right)
You’ll also want to pick these up (or something similar) at the grocery store, but save these ingredients for later in the process:
Prep Work — You’re going to want to chill that can of coconut milk or cream in your refrigerator for a couple of days before you make your ice cream. The longer the better. But two days should do the trick. This is to allow the fat to separate from the liquid because you’ll only be using the fat to make ice cream.
Make the Vanilla Ice Cream Filling/Base:
In a large mixing bowl combine sugar, salt, vanilla, and coconut fat.
Using a hand or stand mixer, mix all ingredients on low until combined.
Once ingredients are combined, increase mixing speed to high until mixture is smooth and creamy.
Transfer mixture to small metal bowl and cover with cling wrap.
Whisk hourly until your ice cream has reached the desired texture.
Now I know this last step can seem a little intimidating, but you’re looking at maximum 3 whisk rounds. I live in a New York City apartment with no central air and just look at the difference between my first and second whisks:

Make the ice cream sandwiches:
Halve the Annie’s birthday cake rice crispies
Dollop the ice cream onto the iced side of one half-rice crispy and top with the other half (iced-side down).
If desired, drizzle some sprinkles on a piece of parchment paper and dip the sides of the ice cream sandwich in sprinkles.
Storage: Wrap in cling wrap and store in freezer.
Note: these ice cream sandwiches will be bite-sized. Also, I got impatient and took the ice cream out at 2.5 hours which made it more difficult to work with than if I had waited until it had 3 hours of freezing time.
Transform Vanilla Ice Cream Base into Birthday Cake Ice Cream
Crumble two of the Partake birthday cake cookies into remaining vanilla ice cream.
Pulverize the cookie bits with a spatula
Whisk to combine and return to freezer for 30-60 minutes to set.
Serve and enjoy!
Here’s the birthday cake the kids gave Zack…Jessie was on the phone and tried to cover that she was taking a personal call at work so the message wound up being “Happy Wrong Number by the Sea” which sort of seems like the title of a 1950’s romantic thriller.
Of course the kids get caught and almost fired, but Stacey covers for them, making her quite possibly the most forgiving assistant manager in the world. But thankfully, this means we get to hang out at Malibu Sands for several more episodes!

I remember being so anxious when they would break in somewhere. Too much rule breaking for me! Ha! But the recipes sound great. Partake brand got on my radar just over the weekend, so I think this will be a fun recipe to try!
