Paris Tea Ice Cream
On this week’s episode (which is confusing if you’re following along because it actually appears out of chronology and after next week’s episode on streaming sites) Stacey is put in charge of Malibu Sands while her father is away. She and Zack discover that her dad accidentally booked two big parties on the same night — so I figured a little caffeinated ice cream would be appropriate for this one!
We’ll be using my favorite tea — Paris by Harney & Sons — but you can use whatever tea you like.
Ingredients
1 can coconut milk
1 teabag
1/4 c sugar
1 tsp vanilla
1 pinch salt
Instructions
Bring water to boil.
Remove from heat and steep tea bag for 5 minutes.
In a metal mixing bowl, whisk tea, vanilla, salt, and sugar until sugar has dissolved.
In a metal mixing bowl, combine fat of coconut milk (discard water) and tea mixture. Whisk until smooth.
Note: If fat and/or oil content does not combine smoothly, add 1/4 cup water to sauce pan on low heat. Place mixing bowl over sauce pan and whisk until smooth.
I just read Lessons in Chemistry and I’m sure that Elizabeth Zott could tell you why exactly this works. But I’m assuming that breaking down the fats and oils helps them bind the to sugar which can bind to the water and voila — we’ve got a smooth ice cream!Freeze for one hour and then whisk. Continue freezing and whisking every forty-five minutes until you reach your desired ice cream consistency.
If you want to be really cute, you could serve it in a tea cup!
