Hello! We’re back again at Malibu Sands where we learn that Zack is in love…with a car. Unfortunately, Mr. Carosi owns the car and wants a lot of money for it. What’s a young, crafty dude to do? Win Mr. Carosi’s favor by promising to win the volleyball match against the rival beach club, North Beach. (I’ve never been a member of a beach club. If any readers have, please leave a comment and confirm that there are in fact rivalries betwixt them).

Zack and Slater sit on the lifeguard chair where Zack spots a ringer for the volleyball team on the beach. Such is the charmed life he leads.

Also I forgot the cafe at the beach club is called “The Sand Cafe.” I know it’s a play on the name of the club…but yuck…how unappetizing. It’s not nearly as appealing as something like Malibu Sands & Scoops, for example. Anyway, Zack informs the gang of his plan at “The Sand Cafe” and they’re all like lol we’ve never played Volleyball together but okay. Shortly thereafter, they encounter a couple of North Beach players, including one future McSteamy.

That’s right, the gangly youth in the blinding orange shirt is none other than Seattle Grace’s own Mark Sloan.

Unfortunately, Zack’s ringer falls through with an ankle injury. Following a series of other really poor fits for the team, Stacey steps in at the last minute so they won’t have to fore-fit. They win, of course. Zack and Stacey share a victorious hug and sparks fly.

This time we’re making coconut ice cream with white chocolate chips (or whatever Gharadelli means by “white chips”) in an oreo cookie pie crust.

Not pictured 1/2 c sugar and 1 pinch of salt

I *highly* recommend using 1 can of coconut cream and 1 can of coconut milk for this because you’ll get a little more bang for your buck. Coconut cream has a lot more fat in it than coconut milk so you’ll have more to work with from the one can. But if you can’t find coconut cream, then using 3 cans of coconut milk should do the trick. Remember to chill your cans in the fridge for at least 2 days prior to making this.

Ingredients

  • Oreo pie crust

  • 2/3 c Ghirardelli White Chips

  • Nestle Toll House Semi-Sweet Morsels (optional for decoration)

  • 1 can coconut milk, 1 can coconut cream (or 3 total cans coconut milk)

  • 1/2 c sugar

  • 1 pinch of salt

White Chocolate Coconut Pie

  1. Combine coconut cream, coconut milk, sugar, and salt in large mixing bowl. Using a hand mixer, mix until smooth.

  2. Mix in white chips.

  3. Place in freezer and chill 1 hour.

  4. Remove from freezer, whisk, and pour into Oreo pie crust.

  5. If desired, use semi-sweet morsels to decorate the pie like a volleyball. Note: you might be more successful with your decorating if you freeze the pie for 30 minutes before you adorn it with chocolate chips.

  6. Cover with cling wrap and freeze 4 hours.

Serve and enjoy!
