End of Summer Lemon Ice Cream
We’ve made it to the end of our Malibu Sands summer. It’s bittersweet—so let’s make some lemonade out of those lemons!
Before we get to the recipe, let’s quickly check in with our friends at the beach club:
Stacey’s dad (Mr. Pumbaa manager of the Malibu Sands) finds out about her and Zack and he’s not too pleased.
Slater has a secret admirer who turns out to be Denise Richards.
And the whole gang has to make sand castles for some annual end of summer thing.
And now for the ice cream!
Ingredients
Three beautiful lemons (okay, they don’t have to be beautiful but geeze, mine were!)
1 can full fat unsweetened coconut milk
1/3 c sugar (we’re using more sugar to cut the tartness of the lemons)
1 pinch salt
Recipe:
Juice three lemons*
In a large mixing bowl combine sugar, salt, lemon juice, and coconut fat (discard liquid).
Using a hand or stand mixer, mix all ingredients on low until combined.
Once ingredients are combined, increase mixing speed to high until mixture is smooth and creamy.
Transfer mixture to small metal bowl and cover with cling wrap.
Whisk hourly until your ice cream has reached the desired texture.
