Godiva Chocolate and Caramel Ice Cream
Drama abounds at Malibu Sands this week. Stacey’s college boyfriend, Craig, shows up just as Zack is working up the courage to tell her that he loves her. There’s a really creepy candle-lighting/fraternity pinning scene in which Stacey’s dad literally holds a ceremony with all the staff present to symbolize the transition of him being the man in Stacey’s life to Craig being the man in Stacey’s life. Yikes.
Then in some kind of teen masculinity showdown, Craig and Zack face-off in the annual ATV beach race. (Craig cheats in the race and also doesn’t care about Stacey’s job and career aspirations. So. You know. In case you weren’t already rooting for Zack and Stacey, you should be now.) In the end Stacey and Zack tell each other they love each other and all is well! So let’s celebrate with some romantic, chocolate-caramel ice cream!
This recipe is super easy. It’s just vanilla ice cream plus Godiva Chocolate-Caramel bars. I broke the bars apart with my hands—it might have been easier to use the back of a wooden spoon before I opened the package though. Either way it was super tasty.
Ingredients:
1 can full fat unsweetened coconut milk
1/4 c sugar
1 pinch salt
1 tsp vanilla (but honestly I just put in however much I feel is right)
2 1.1 oz Godiva Masterpieces Milk Chocolate Caramel Lion of Belgium bars
Recipe:
In a large mixing bowl combine sugar, salt, vanilla, and coconut fat (discard liquid).
Using a hand or stand mixer, mix all ingredients on low until combined.
Once ingredients are combined, increase mixing speed to high until mixture is smooth and creamy.
Whisk in Godiva bar pieces
Transfer mixture to small metal bowl and cover with cling wrap.
Whisk hourly until your ice cream has reached the desired texture.
Recognizing that I may be losing my credibility because I recently claimed that the Paris Tea ice cream was the best one yet — I’d like to double down and say…I think this one is the best one yet. I had a really hard time not sneaking spoon fulls of it in between whisking.
And realizing that I needed to take a finished product photo to share with all of you may be the only reason I didn’t eat all of it after the first whisking when it was the texture of a Dairy Queen Blizzard. (Maybe I’ll let the amount I have left over get a little melty and then enjoy it this way!)
Anyway, I’m doubling down — THIS. IS. THE. BEST. YET. I mean just look at this beauty!!!
